Went out for Mexican food the other day and I had chicken Mole with rice and beans. I really love Mexican food and I've learned how to make a bunch of different Mexican dishes. Mostly because it's hard to get good Mexican food in Europe (especially for someone who used to live in California).

I have tried to make my own Mole, but it wasn't quite right. I've had Mexican Grandma Mole from a woman I was friends with in Alameda. So I know how it's supposed to taste. The restaurant one [here in FL] was pretty close to that one. I'm going to try again when I get home, and hopefully I'll get it right. (The Wife won't mind trying tasty noms!)
